It's Been Awhile..


WOW! I cannot believe that it has been 3 years since I have been on the blog. I almost feel guilty keeping this as times have changed and many updates are needed; yet here we are.

So many things have changed since the last time I made an entry. I am now married, for just over a year, have 4 step kids, live in IL and am up 39lbs since the last LCD I did. Life has been great and I cannot complain but one thing is for sure, the weight has got to change. I am now 209.lbs which is the most I have ever been. For those of you new readers joining my progress, I have Hashimotos (Thyroid problems) and PCOS... the PCOS being a new development which only adds to how quickly I am gaining and how impossible it is to lose.

A few years ago I discovered that HCG can be "bad" for you thyroid and opted out of doing the diet again. After many prescription weight loss drugs and every different diet attempt I am back. I have scheduled an endo appointment for the mid of my HCG round and am not taking it lightly.

Today is day 1 of loading.... here goes nothing....well hopefully here goes all of the weight! Cheers!

Spicy Chicken Lettuce Wraps

Preparation: Cube 100g of Lean chicken breast, set aside. Dice 1/3 cup of onions Mince 2 cloves garlic 1/4 cup water 1-2 tbs Braggs Liquid Aminos Chop a head of romaine into taco size pieces, rinse and dry, set aside Spices: 1/4 tsp.onion powder 1/4 tsp chili powder 1/4 tsp cayenne pepper (or to taste) 2 dashes of paprika a dash of Chinese 5 spice, black pepper and red pepper flakes Saute in small frying pan garlic and onions. On HCG there is no fat or oils so simply had water to the pain splash by splash to keep bottom moist enough to prevent burning. Add rest of water after onions and garlic have cooked for a few minutes. Toss in spices, chicken & brags and allow to simmer for a few minutes, turning chicken. Once most of water is evaporated the chicken should be done. (check to be sure) Place contents of pan in a bowl, serve with lettuce pieces and enjoy!!
